Jenny Flynn, Head Chef at Faithlegg House Hotel and Golf Resort, in Co. Waterford, has some surprises in store on her new fine dining menu. Dinner is served at Faithlegg in the  magnificent Roseville Rooms, a dining space,  befitting of the grand nature of this country house and it’s tranquil surroundings. The brand new menu is being previewed this weekend, at a special price. Expect Bluebell Falls goats cheese, Tea Smoked Mackerel, Irish Duck Rillettes and wild Wexford mushrooms among starter choices. Mains include lots of fresh fish, local lamb, free range chicken and good Irish beef. Jenny’s house desserts are heaven, including the homemade ice cream. An Irish artisan cheeseboard is accompanied by homemade chutney and crisps made from the famous Waterford Blaa. All for €90 euros for two people, including wine, for four courses, this coming weekend.
