Boxty is so famous in the northern counties of Sligo, Donegal and southern Ulster that it had a poem written about it!   Boxty on the griddle/Boxty in the pan/If you can’t make boxty/You’ll never get a man’, was the swansong from mother to daughter down the years! Recipes differ from family to family, but most use fluffy mashed potatoes with grated raw potatoes for crunch.  The mix is bound with flour, milk or buttermilk and egg then fried brown on the griddle. Like all these old fashioned dishes, Boxty has become work of art for modern chefs. In these culinary times, Boxty may include garlic, herbs and even spices, often served as an accompaniment to the fine meats of Ireland.
