Boxty on the griddle/Boxty on the pan/If you can’t make Boxty/You’ll never get a man! This was the rhyme handed down from mother to daughter for generations in the northern counties of Ireland, where they can make Boxty in their sleep! This griddle cooked potato dish is a mix between a potato cake and potato bread. A mix of potatoes, flour and bread soda which binds together and cooks to form little golden brown rounds of deliciousness. A real Irish treat for the coming long St.Patrick’s weekend. If you’re lazing around this weekend and fancy a dabble at making Boxty – here is our traditional recipe from Donnybrook Fair Cookery School in Dublin. Dead easy to knock up and sustaining to eat. Pass on the rhyme to the women of the family while you’re at it!
