Chef Owner, Warren Gillen is a champion of foods of the region and at Cistín Eile he lets the food on the plate speak for itself. The restaurant proudly serves Irish food made with local artisan produce.


Meat that comes from the butcher next door and fish from suppliers just five minutes stroll away – now that’s local. At Cistín Eile, in the seaside town of Wexford, that’s exactly where the produce comes from. Head Chef and owner, Warren Gillen has the best of local ingredients to work with and he has a passionate attitude to showing how they should be served. Warren prefers to deal directly with his suppliers, ensuring the best relationships and a bond of trust that guarantees seasonal offerings. Consequently, the menu at his small restaurant changes daily in accordance with what Warren’s suppliers have available.


Décor and ambience at Cistín Eile is relaxed and informal with a café style set up. There is an open kitchen serving hatch to the rear of the room, table seating to the front, which overlooks the street, and there is a small light filled raised seating area under an apex roof at the back. It’s a practical layout that works wonderful well.

The restaurant name means ‘another kitchen’, but this is not just another kitchen. This is not just another chef. Warren is a determined champion of the foods of his town and region. A man of few words in person, and on his menus. He prefers to let each plate of food speak for itself. And so it does.

For lunch, think fresh and hearty sandwiches filled with the likes of local butcher’s home cured corned beef with onion relish and red cabbage salad. In the evenings, the menu changes and features dishes like market fresh fish with a seasonal salad and diced potatoes. These things don’t sound terribly complicated or intricate, but, when placed in front of you, you’ll be amazed by the perfect execution of cooking, presentation with sleight of hand and harmony of flavours and textures. Signature dishes are marked on the menu. Good ingredients need little explanation. All is revealed in the eating.

Wines include a great value house white and red by the bottle or glass. Then a selection exclusively from the Old World – Spain, Italy and France. Three great whiskies and a couple of dessert wines finish off. Beverage sourcing is as conscientious as for the food and Dungarvan Brewing Co. provide the Irish craft beers.

Cistin Eile is a lesson in simplicity at its greatness. Something we should all appreciate.
