Dating back to the early 1700s, the Granville is one of Ireland’s oldest hotels and has played a prominent role in Waterford city’s rich, social and political history. Bianconi is the main restaurant in the Granville Hotel and it specialises in seasonal dishes which highlight some terrific Irish produce. Breakfast, dinner and a four-course Sunday lunch are served in this elegant dining room.

The Thomas Francis Meagher Bar is an intimate and warm space where you can cosy up with a refreshing beverage from the extensive drinks menu and enjoy a more casual dining experience with flavoursome dishes from the bar menu.


The Bianconi Restaurant specialises in seasonal dishes that highlight Irish produce. It is a real showcase for all that is good in Irish eating. You’ll find flavourful appetizers featuring south east coast seafood, Irish smoked salmon and house favourites like the Granville Hotel pate. Main dishes usually include Comeragh Mountain lamb, the fresh catch of the day from local boats and succulent Irish steak and beef dishes as well as vegetarian options. Tempting desserts follow with a good choice of specialist teas and coffees.

The style of cooking is modern Irish with some eclectic touches and whilst presentation is chic, decent portion sizes ensure you won’t leave hungry.

There’s also an early bird menu and a four-course Sunday lunch menu.

Breakfast is also served in the Bianconi Restaurant and is a bountiful spread laden with local delicacies. Take your pick from hot Waterford organic porridge with cream and honey or whiskey, fresh breads and pastries and Wexford Killowen yogurt and fruit. A hot breakfast menu includes The Full Irish and a delicious eggs Benedict with Waterford ham on a Waterford Blaa. What’s a Blaa? Well, a Waterford ‘Blaa’ is a soft floury bread roll which has Protected Geographical Indication (PGI) status which means it can only be produced within Co. Waterford.

Finish off this feast with some warm, freshly baked scones smothered in the hotel’s award-winning strawberry and raspberry jams.


Rooms & Facilities

Traditions of comfort, excellent service and hospitality are upheld by second generation Cusacks and of course, Richard and his team.

Rooms are luxuriously furnished and equipped with all you need for a comfy stay including lots of personal touches and amenities.

Apart from the terrific restaurant and bar, there are a variety of suites and syndicate rooms for those looking to conduct business in the hotel and there are stunning spaces for weddings, civil ceremonies and other special occasions, too.

The glass porch over the entrance leads to a lovely, welcoming lobby area. Here you’ll check-in and the friendly staff will tell you all you need to know about the hotel and the local area.

The Granville Hotel has 100 guest bedrooms which are individually decorated with a traditional feel but with all the modern conveniences you need to make your stay relaxing and enjoyable.

There is a mixture of double, twin and triple bedrooms and the rooms are dressed with fabrics and antiques to reflect the architecture and original interiors of this 18th century manor-style mansion.

You can upgrade to rooms with a king size bed or river views or one of the Penthouse Suites. The suites are on the top floor of the hotel and have a balcony with a lovely view of the river.

All rooms are en suite with bath/shower and have indulgent toiletries and soft, fluffy towels.

Rooms come with a flat-screen TV, a telephone, a high powered hair dryer, free Wi-Fi and tea and coffee making facilities and biscuits. There is also 24-hour room service and a laundry service, too.


The Granville Hotel specialises in seasonal dishes which highlight Irish produce. To keep food miles low, local suppliers are used as much as possible particularly those with sustainable business practices. The Granville also have a Rooftop Cocktail Roof Garden in which they grow an amazing selection of herbs that are used in their cocktails and beverages in their bar.
