St Patrick’s long weekend is upon us! There’ll be time for lounging around and enjoying some fine food no doubt, among all the other celebrations. Weather looks set to be good. A green salad might be an appropriate side dish for the patriotic weekend to come. Gather all things edible and green! Wild garlic, spring onions, lettuce leaves, green olives, peas, broad beans. Prepare and toss them in big bowl with a dressing made in proportion of 4 tbsp Irish rapeseed oil, 1 tbsp cider vinegar, 1 tsp Dijon mustard and some fresh green herbs like snipped chives or parsley. Season and dress your salad, to serve with any main course this weekend!
